As I navigate the waters of the Whole30, which is about to morph into complete Paleo living since the 30 days end tomorrow, I’m finding it crucial to have some snacks or smaller meals that are easy to prepare and delicious. Since a bag of chips or even a protein bar is now out of the question, I’ve needed to get creative. Cashews and macadamia nuts can only sustain me for so many days.
I’ve experimented with a number of recipes and created some of my own. The bonus is that my local Pick ‘n Save has a wide variety of healthy options, organic vegetables, and some hard-to-find veggies like parsnips. After experimenting I’ve come up with three favorites: Lime Guacamole; Artichoke, Spinach and Avocado Dip; and Cucumber BLTs.
Ingredients:
4 avocados
2 small tomatoes
1 tbsp onions
1 jalapeno pepper
3 limes
1 tbsp minced cilantro
Cut and peel the avocados, placing them in a large mixing bowl. Chop the tomatoes, onions and jalapeno into small pieces. Squeeze one lime into the vegetables. Mash ingredients together. Squeeze another lime into the mix and add the cilantro. Continue to mix/mash until it is the consistency you like. Add another lime, if needed. (Sometimes I like to add a half cup of hot salsa to the mix to add a little something extra.)
Ingredients:
1 can of artichoke hearts
2 large avocados
2 cups of fresh spinach
Cut and peel the avocados. Place them in a blender and pulse until the mix is smooth. Chop the artichokes and spinach into small pieces. Mix avocados, artichokes and spinach together. Use vegetables, jicama, or sweet potatoes as a dipping device.
Ingredients:
1 cucumber
1 lb of turkey bacon
2 cups of shredded lettuce
2 large tomatoes
1/2 cup of homemade mayonnaise
Fry bacon in a large pan until it is crispy. Remove from the pan, save the grease, dry the bacon and break into small pieces. Shred the lettuce and cut the tomatoes into small pieces. Peel the cucumber, then slice into pieces thick enough to hold the BLT mix. Add lettuce, tomatoes, bacon and mayonnaise to a bowl. Drizzle a little of the bacon grease into the bowl. Mix until everything is well coated. Scoop the mix out onto the cucumbers.
Finding healthy options and organic vegetables is easy now with the Pick ‘n Save health key™ system. Those cucumber BLTs look delicious! Some years ago, the Nordic countries launced something similar to the Health key, but this is a concept that has received a lot of criticism in Norway for not being sufficiently strict when it comes to which products get to be labelled with the Health key.

I love how you illustrated your different Paleo snack but also how you showed us the health key system at Pick and save. I feel that so many people are dealing with diet issues ATM and a store that gets on board and helps their customers should be highly regarded!
